Recipe of the Week: Savory Sri Lankan Stir Fry
When I first learned that some people come home from work every night and then decide what to cook for dinner, I was genuinely shocked.
Working all day, coming home exhausted, staring blindly into the open fridge, and trying to summon culinary inspiration? No thank you.
Food prep is all about taking decisions off your plate. When you're tired and hungry, the path of least resistance always wins. If you already have a delicious meal ready to pop in the oven or microwave, choosing the nourishing option becomes effortless.
Here is my current go-to prep recipe:
Savory Beef & Pepper Stir-Fry (courtesy of my amazing neighbor)
Sauté onion and garlic in olive oil until lightly browned.
Add diced red peppers and cook for 5 minutes.
Stir in ground beef, soy sauce, oyster sauce, a touch of sesame oil, chili powder, and salt. Cook until the beef is browned through.
Toss in fresh spinach at the very end and stir until wilted.
Pack it into containers for the week, and future-you won't have to think twice about dinner.
